It won't be long before we can't buy any more eels for bait, I am sure. $200/pound for elvers and you know what happens at that point. Not to mention, they really do make amazing baits for big stripers. I grew up eating eels and spearing them while snorkling. That was a blast and they were delicious on the grill.
